Soil:
hard limestone, ancient alluvium containing round stones.
The average age of the vines is 15 to 20 years with a 40hl/ha yield. The vineyard is ploughed all along the vegetative phase without any pollarding.
Varieties:
Syrah and grenache in equal proportions.
Vinification:
The grapes are destemmed and kept in thermo buried tanks which enable natural thermoregulation. The wine is then matured for 6 months in cement tanks.
Tasting:
Deep garnet red robe. Predominence of aromas of red and wild berries. When it ages more spicy notes of leather arise.
Tasting advice:
Serve at 17° to 18°. When young it keeps its freshness and fruit, which enables it to be served with a grilled beef rib. After 4 to 5 years, some fined cheese are suited.
